Quick Cheesecake (microwave)
     
1/4 cup butter or margerine
1 cup graham cracker crumbs
1 - 8oz. package cream cheese
1/3 cup sugar
1 egg
1 Tablespoon lemon juice
1 cup sour cream
3 Tablespoons sugar
    .
    .
  1. Place butter in a 9 inch pie dish
  2. Microwave 30 - 45 seconds, until melted
  3. Stir in crumbs, and press over bottom and sides of dish
  4. Microwave 2-3 minutes, until set.
  5. Place cream cheese in a large mixing bowl and microwave on "low"(30% power) 30 - 45 seconds, until softened.
  6. Beat in sugar and egg until smooth.
  7. Stir in lemon juice.
  8. Pour mixture into cooled crust.
  9. Microwave 2-3 minutes until set around edges, turning dish a half turn halfway through
  10. Mix together sour cream and sugar, and spread over cheesecake
  11. Microwave 1 - 1 1/2 minutes, until topping is heated
  12. Cool. Keep refrigerated until ready to serve.
