Skillet Walnut Pumpkin Bread


1/3 cup butter, softened
1 cup sugar
2 eggs, slightly beaten
1 cup canned pumpkin
3/4 cup milk
1 cup flour
3/4 cup Plus a little extra cornmeal
1 teaspoon allspice
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup walnuts, chopped
halved walnuts for garnish

  • Grease a nine inch cast iron skillet
  • Dust with extra cornmeal
  • Combine butter, sugar and eggs in a large mixing bowl
  • Mix well
  • Add  pumpkin and milk, mix well
  • In a second bowl combine flour, cornmeal, allspice, baking soda and baking powder.
  • Add pumpkin mixture
  • Stir until just blended
  • Stir in chopped walnuts
  • Pour into skillet
  • Garnish with walnut halves
  • Bake at 375o F for 45 minutes, test for doneness using a toothpick
  • Serve warm
