Vegetable Pilaf





3 cups cooked rice (1 cup of uncooked rice will equal 3 cups cooked)
1 can cream of mushroom soup
1 can cream of celery soup
1 cup of cheddar cheese, shredded
1 (2 oz) jar of pimientos, drained
1 package of frozen shopped spinach, thawed and drained
1 package of frozen hopped broccoli, thawed and drained
1 can french fried onions
 
 

  • With rice still in sauce pan, add soups, cheese, and pimientos
  • Stir well
  •  In medium bowl combine spinach, broccoli and 1/2 of the onions
  • Spread half of the rice mixture into a 12 X 8 baking dish
  • Cover with vegetable mixture
  • Top with remaining rice mixture
  • In conventional oven bake at 350o F for 40 minutes
  • If using microwave, cover and cook on high for 6 minutes, rotate dish and bake another 7 minutes
  • Remove pilaf from oven sprinkle remaining onions over top
  • Return to oven
  • Bake for 5 more minutes in conventional or 1  minute in microwave
  • Let stand for 5 minutes before serving
