Thumbprint Cookies
1/2 cup shortening/butter mix
1/4 cup brown sugar (packed)
1 egg, separated
1/2 teaspoon vanilla extract
1  cup flour
1/4 teaspoon salt
3/4 cup nuts (chopped fine)
Jelly
 
 
  1. Mix shortening/butter, sugar, egg yolk and vanilla
  2. Mix in flour and salt
  3. Using a teaspoon to measure make little balls
  4. Beat egg white slightly
  5. Dip balls in egg white
  6. Roll in nuts
  7. Place 1 inch apart on greased cookie sheet
  8. Press thumb gently in center of each cookie
  9. Bake at 350 F for 10 to 12 minutes
  10. Cool on sheet for several minutes, than transfer to wire rack
  11. Fill thumbprints with Jelly of choice (I like strawberry or mint)
