Spritz Cookie
1 cup shortening
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
2 1/4  cups flour (sifted)
1/2 teaspoon salt
 
 
  1. Mix shortening, sugar, egg, salt and vanilla
  2. Work in flour
  3. Force dough through cookie press onto an ungreased cookie sheet
  4. Bake 6 to 9 minutes at 400 F (these cookies do not brown)
 
Almond Spritz - substitute almond flavoring for vanilla

Chocolate Spritz - add 2 squares of melted unsweetened chocolate to shortening mixture

Rum Spritz - substitute rum flavoring for vanilla, and glaze after cooling

Rum Glaze

1/4 cup butter
1 cup powered sugar (sifted)
1 teaspoon rum flavoring
 

  1. Melt butter in saucepan
  2. Blend in sugar and flavoring
  3. Stir in up to 2 tablespoons of hot water until glaze is spreadable.
Holiday tip - You may wish to tint either the plain, almond, or rum with food coloring.
