Mexican Wedding Cakes
1 cup butter
1/2 cups powdered sugar (sifted)
1 teaspoon vanilla
2 1/4 cups flour (sifted)
1/4 teaspoon salt
3/4 cup chopped nuts
 
 
  1. Mix butter, sugar, and vanilla
  2. In large bowl mix flour, salt, and baking powder
  3. Mix dry ingredients into butter mixture
  4. Mix in nuts
  5. Chill at least 1 hour
  6. Roll dough into 1 inch balls
  7. Place on a greased cookie sheet (cookies don't spread)
  8. Bake at 400 F for 10 to 12 minutes
  9. While still warm roll in powdered sugar
  10. Let cool
  11. Re-role in sugar
