Cinnamon Butterfingers
1 cup butter (softened
3/4 cup brown sugar (packed)
2 1/4 cups flour
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon (divided)
3/4 cup powdered sugar (sifted)
 
 
  1. Cream butter, sugar in large mixing bowl
  2. Beat until light and fluffy
  3. Add vanilla, beat well
  4. Gradually stir in flour and 1 teaspoon of the cinnamon
  5. Chill for at least 2 hours
  6. Scoop with teaspoon, roll between hands until about 2" long
  7. Place cookies 1 inch apart on cookie sheet
  8. Bake at 300 F for 25 to 30 minutes
  9. Remove and transfer to cooling racks
  10. Allow to cool completely
  11. Combine powdered sugar and remaining cinnamon, mix well
  12. Roll cookies in sugar mixture.
