Baking with Coffee

Real Coffee Cake

  2 cups flour
  1 cup sugar
  1 tablespoon baking powder
  3 teaspoons instant coffee
  1/2 teaspoon salt
  1/2 cup unsalted butter, softened
  1/2 cup half and half
  1/2 cup Kahlua
  5 large egg whites
  1. Mix flour, sugar, baking powder, coffee and salt.
  2. Add butter and half and half.
  3. Beat 1 minute on medium high speed.
  4. In second bowl, blend Kahlua and egg whites.
  5. Slowly mix in Kahlua mixture into flour mixture, mixing at medium high.
  6. Divide batter between two greased and floured or parchment lined 8 inch round cake pans.
  7. Bake at 350o F oven for 20-23 minutes, or until toothpick inserted in cake center comes out clear.
  8. Cool layers in pans for 10 minutes.
  9. Carefully run knife around sides of pans to loosen layers.
  10. Invert onto cake rack to cool.
  11. Frost with your choice of icing.
