FYI's Baking with Coffee
Coffee Pecan Pie
3 eggs, beaten
3/4 cup unsulfured molasses
3/4 cup light corn syrup
1/2 cup double strength coffee
2 tablespoons butter, melted
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pecans
4 tablespoons flour
1 9-inch unbaked pie shell
whipped cream for garnish

In large bowl mix eggs, molasses, corn syrup, coffee, melted
butter, salt and vanilla.

In a second bowl, mix pecans and flour.

Combine mixtures of both bowls.

Pour into an unbaked pie shell.

Bake at 375o F for 40 - 45 minutes or until firm.

Cool before cutting.

Garnish with whipped cream if desired.
