Coffee Pecan Pie

     
  3 eggs, beaten
  3/4 cup unsulfured molasses
  3/4 cup light corn syrup
  1/2 cup double strength coffee
  2 tablespoons butter, melted
  1/4 teaspoon salt
  1 teaspoon vanilla extract
  1 cup chopped pecans
  4 tablespoons flour
  1 9-inch unbaked pie shell
    whipped cream for garnish
     
 
  1. n large bowl mix eggs, molasses, corn syrup, coffee, melted butter, salt and vanilla.
  2. In a second bowl, mix pecans and flour.
  3. Combine mixtures of both bowls.
  4. Pour into an unbaked pie shell.
  5. Bake at 375o F for 40 - 45 minutes or until firm.
  6. Cool before cutting.
  7. Garnish with whipped cream if desired.
