- Pre heat oven to 300o F
- Place cream in double boiler
- While cream is heating, beat egg yolks
- add vanilla sugar, vanilla, coffee and Kahlua.
- Add mixture to warmed cream.
- Continue cooking until thick (stir constantly)
- Strain the mixture through a fine sieve, into a large soufflé
or individual custard dishes.
- Place soufflé or custard dishes in large shallow pan.
- Place pan in oven, fill with water
- Bake for 35 to 45 minutes, until center of custard is firm
- Remove from water, let cool.
- Cover and chill
- Sprinkle sugar over top(s)
- Place under broiler, until sugar has caramelized. WATCH CLOSELY!
- Remove and chill for 3 hours
