Chocolate-Covered Cherries

3 3/4 cups (1 pound) powdered sugar
2 cups walnuts, chopped finely
2 cups flaked coconut
2 sticks butter, softened
1 1/3 cup creamy peanut butter
75 maraschino cherries with stems
2 packages (12 oz) chocolate chips
1/4 block paraffin wax


    1. Drain cherries on paper towels.
    2. Mix sugar, nuts, coconut butter peanut butter
    3. Roll mixture into little balls (about an inch)
    4. Poke a hole in the center of each ball, and insert cherry
    5. Gently press dough around cherry, leaving only the stem showing
    6. Set aside
    7. Melt paraffin in top of double boiler
    8. Add chocolate chips, and stir until melted
    9. Holding cherries by stem, dip into chocolate
    10. Place on cookie sheet, lined with wax paper
    11. Refrigerate
