Christmas Biscotti
1 cup butter
1 cup sugar + 2 tablespoons sugar
2 1/2 teaspoons baking powder
2 eggs
1 egg yolk
1 egg white - beaten
1 tablespoon orange peel - shredded
1 teaspoon water
3 cups flour
3/4 cup green candied cherries - chopped
3/4 cup red candied cherries - chopped
1/2 cup almonds - toasted & chopped
  1. Place butter in large bowl, mix at medium speed adding 1 cup sugar, and baking powder.
  2. Beat in eggs, egg yolk, and orange peel into mixture.
  3. Using a wooden spoon mix in cherries, and flour.
  4. Divide dough in to half
  5. Using a 14 inch loaf pan, shape into loafs
  6. Place each loaf on a greased cookie sheet
  7. Gently flatten to with hand
  8. Mix egg white and  water
  9. Brush onto loafs, sprinkle with remaining sugar
  10. Bake at 375 F for 20 to 25 minutes.
  11. Let cool on cookie sheet until completely cool.
  12. Cut into 1/2 inch slices.
  13. Places slices, onto cookie sheets
  14. Bake at 325 for 10 minutes
  15. Turn pieces over, and bake for another 10 minutes.
  16. Remove to a wire rack, let cool.
