Cherry Caramel Ring
1/4 cup butter
1/2 cup brown sugar packed
2 tablespoons light corn syrup
1/2 cup pecans
1/4 cup maraschino cherries, quartered
1 can of biscuits
  1. Melt butter in a 8" round dish (bowl)
  2. Sprinkle sugar over butter, add corn syrup, stir well.
  3. Place a drinking glass in middle of dish
  4. Sprinkle pecans and cherries over butter mixture
  5. Arrange biscuits around glass
  6. Cook and 50% power for 5 to 6 min.
  7. Remove, glass, invert dish on to serving plate.
  8. Drizzle remaining syrup over rolls.  
Bread Pudding
4 cups bread cubes (4 to 5 slices)
2 cups milk
1/4 cup butter
2 eggs, beaten
1/2 cup brown sugar packed
1/2 cup raisins
1/2 teaspoon nutmeg
1/4 teaspoon salt
  1. Spread bread evenly in 8" dish.
  2. Sprinkle with sugar, nutmeg, salt, raisins
  3. Place milk and butter into a glass bowl
  4. Cook at high until butter is melted and milk is warm, about 4 min.
  5. Remove from microwave and quickly add eggs and mix well
  6. Pour over bread crumbs
  7. Cook at 3/4 power about 10 min. Serve warm or chilled  
Blueberry Betty
1 quart blueberries, washed and drained
1 tablespoon lemon juice
3 tablespoons sugar
1 tablespoon cornstarch
1 cup flour
1/4 teaspoon ground cinnamon
1 cup dark brown sugar, firmly packed
1/2 cup margarine
pinch of salt
  1.  
  2. In glass 1 1/2  quart casserole dish place berries
  3. Sprinkle with lemon juice and sugar
  4. cover and heat for three minutes
  5. Stir in cornstarch until smooth
  6. Sift flour, salt, cinnamon and brown sugar into a small bowl
  7. Cut butter into flour mixture until mixture is crumbly
  8. Sprinkle mixture over berries
  9. Heat uncovered for 5 to 6 minutes (until topping is no longer doughy)

  10. For cosmetic reasons you may wish to place under a broiler for a couple of minutes to brown.
