Fruit Bars

Several different filling listed below
 

3/4 cup butter/shortening mix
1 cup brown sugar
1 3/4 cps flour
1/2 teaspoon soda
1 teaspoon salt
1 1/2 cup rolled oats

  1. In large bowl butter/shortening and sugar
  2. Stir in flour, soda and salt
  3. Mix in oats
  4. Press and flatten half of mixture over bottom of greased oblong pan (13" X 9 1/2" X 2")
  5. Spread with filling
  6. Top with remaining crumb mixture
  7. Bake 25 to 30 minutes
  8. Cut and remove while warm
Date Filling

3 cups dates, coarsely chopped
1/4 cup sugar
1 1/2 cup water
 

  1. Mix dates, sugar and water in saucepan.
  2. Cook over low heat stirring constantly until thickened
  3. Set aside and let cool
Date/Apricot Filling

1 cup dates, coarsely chopped
2 cups mashed cooked dried apricots
1/2 cup plus 2 tablespoons sugar
 
 

  1. Mix all ingredients in saucepan.
  2. Cook over low heat stirring constantly until thickened

  3. Set aside and let cool
     
Date Filling

Use one cup of your favorite jam or preserves
